Information about Nutritional Yeast
Nutritional yeast is nutrient dense, as well as high-protein and low-fat. Abundant in B vitamins, it is a flavorful and functional seasoning for those who adhere to a plant-based diet. In fact, it is affectionately known as “nooch,” because it is considered the vegan substitute for cheese.
Origin: China
Active Compounds: Protein, Vitamins A, C, and E, Thiamin, Riboflavin, Niacin, Vitamin B6, Folate, Selenium, Zinc and (fortified with) Vitamin B12.
Storage Tips: Keep in a sealed container in a cool, dry, dark cabinet or pantry.
Appearance and Aroma: Yellowish flakes with a nutty, cheese-like flavor.
Flavor Profile: Glutamic acid gives nutritional yeast a umami (savory) quality. The flavor is described as cheesy and nutty. Use with other savory herbs, such as onion, garlic, sage, and thyme.
Culinary Uses: Nutritional yeast can be added to nearly any food, especially when cheese flavor is desired, but dairy, fat and cholesterol are not. Sprinkle on popcorn, over roasted vegetables, salads, soups, egg and bean dishes, risotto and sauces (i.e., cheese sauce for vegan macaroni and cheese).
Safety: This product may not be suitable for people with a known yeast allergy or sensitivity. May cause a flareup in symptoms associated with inflammatory bowel disease (IBD), gout or glaucoma.
