Black Hawaiian sea salt, also known as black lava salt, is harvested from the coastal waters of the Hawaiian islands. Ancient solar evaporation techniques preserve the salt’s mineral content and give it a crunchy bite, while a coating of activated charcoal obtained from coconut shells provides its distinctive black color and earthy flavor.
It is harvested from evaporation pools, in some cases by hand. It significantly differs from table salt in processing as well as in composition. The latter is refined and typically contains anti-caking agents like calcium phosphate, while the mineral content in sea salt is preserved. This gives the salt a much more robust, earthy flavor.
